Albacore Tuna Light

1 ea. 6 oz. can Solid white Albacore Tuna (drained)
2 eggs (beaten)
1 ½ cups whole milk
2 slices of white bread (broken up)
1 tablespoon cornstarch
½ cup grated carrot
1 small onion (chopped)
½ cup grated cheddar cheese
½ tsp. minced parsley
salt and pepper to taste
Mix all ingredients together and bake in a buttered 1 – quart casserole at 350°F for about 45 minutes or until set.
