Black and White Salad

1 to 2 cans of Albacore Tuna
1 can black beans, drained and rinsed
1 can white kidney beans, drained and rinsed
½ cup cucumbers, chopped
½ red pepper, chopped
1 small onion, chopped
¼ cup cilantro, chopped
1/3 cup cider vinegar
¼ cup olive oil
pinch of salt
¼ teaspoon garlic powder
pinch of black pepper
lettuce cups
In a large bowl, combine the first 7 ingredients, in a small bowl, whisk vinegar, oil, and seasonings. Pour over Albacore mixture and toss to coat. Cover and refrigerate until serving. With a slotted spoon, spoon into lettuce cups. Place cups on a large serving platter. Makes a nice display.
